Chocolate Nest with Colorful Eggs

Create fun plant-based. vegan and gluten-free desserts in your home!

TRILOGY NEST

For a really quick and easy nest option you can simply melt ½ cup of vegan chocolate chips. We wanted healthy refined sugar free nests, which is why we used the following ingredients:

Ingredients:
⅓  cup coconut oil

1 tbsp cacao powder

1 tbsp cacao butter

2 tbsp coconut sugar

Pinch of salt

1 ½ cups cereal* (I used Ezekiel sprouted grain cereal) 

¼ cup desiccated coconut (unsweetened)

EASTER EGGS


Ingredients:

½ cup desiccated coconut (unsweetened)

¼ cup blanched almond flour

1 tbsp honey (use maple syrup or agave for a vegan option)

2 tbsp coconut oil

½ tsp blue spirulina

½ tsp freeze dried pitaya powder


*Cereals that work well are corn flakes or rice puffs, but really you can experiment with your own favorite cereal. Use a gluten free cereal to make this recipe gluten free.

DIRECTIONS

  1. For the nests, place the coconut oil, cacao powder and cacao butter into a glass bowl. Place the glass bowl over a saucepan with boiling water.

  2. Once the mixture has melted, stir in the coconut sugar. Pour the cereal and desiccated coconut into the glass bowl with the chocolate and mix really well until all the cereal is totally covered in the chocolate. 

  3. Spoon this mixture into some muffin cases, creating a little dent or dip in the middle for a nest shape. Refrigerate while you prepare the rest.

  4. Place the coconut, almond flour, honey, and coconut oil into a small bowl and mix really well with your hands. Make sure everything is fully incorporated. 

  5. Separate the mixture evenly into three small bowls. 

  6. In one bowl add the blue spirulina and mix again with your hands, then form into small egg shapes. 

  7. Add the pitaya powder into the next bowl, mix and form into eggs. Form the remaining mixture into white eggs. 

  8. Arrange the eggs into the little nests and place them back in the fridge for 30 minutes to set. Before serving, remove the muffin cases from the nests so the nests stand free.
